Recipe of the Week

Hey guys! Have you been doing your time logs? I have been and I’ve also started making some small changes here and there. It’s really helped me at work and at home.

One thing that always takes a lot of my time, is trying to figure out what I want to eat! I’m very indecisive when it comes to food. I can never make my mind up unless it’s tacos, then there’s no other choice!

I’m also not a great cook! My husband does most of the cooking in our house because well, I suck at it! But I have found a few recipes here and there that I can rock! This week’s recipe is one of them, Parmesan Encrusted Chicken!

This is one of my favorite recipes. And to be honest I found it on the back of a Hellman’s mayo jar! It’s super easy and absolutely delicious! Not necessarily healthy but awesome nonetheless.

Here’s what you’ll need to make this recipe:

1 lb of chicken breasts (boneless, skinless works and so does bone in with the skin)

1/2 cup Mayo

1/4 cup grated Parmesan cheese

1/4 cup Italian Bread Crumbs

Now here’s the messy part, which my 7 year old loves to help with!

Instructions

Preheat your oven to 425 degrees.

Mix the Parmesan cheese and Italian bread crumbs in a bowl. Then coat the chicken in the mayo. Now you want to coat the mayo covered chicken with the mixture of Parmesan and Italian bread crumbs!

Bake in a glass baking dish for 20 minutes or until chicken is cooked all the way through!

I hope you love this recipe as much as I do! It it quick and easy. Adults and kids love it! So it’s a great meal for those busy nights.
